What is Döner?

What is a Kebab?
"Kebab" is a broad term for seasoned meat that is grilled or roasted. Around the world there are dozens of different styles of kebabs.
A Döner Kebab is a specific type of kebab where the meat is stacked on a vertical rotisserie and shaved fresh as it cooks. It's one of the most popular street foods throughout Europe and Turkey.
What's the difference between Döner, Gyro, and Shawarma?
While they may look similar, each has its own unique heritage and flavor.
Döner – Originated in Turkey with carefully seasoned meat roasted on a vertical spit.
Gyro – The Greek version, typically featuring Mediterranean herbs and served with tzatziki.
Shawarma – A Middle Eastern variation featuring warm spices like cumin, cinnamon, turmeric, and cardamom.

What is Kofta?
Kofta (also spelled Kofte in Turkey) is a traditional dish made from seasoned ground meat, typically beef or lamb, mixed with fresh herbs, spices, onions, and garlic. The mixture is hand-formed into logs or patties and grilled over an open flame for a juicy, flavorful bite.

What is Shish?
"Shish" comes from the Turkish word for skewer. Shish kebab consists of marinated pieces of meat—most commonly chicken, lamb, or beef—threaded onto metal skewers and grilled over an open flame.
Unlike döner, which is cooked on a rotating vertical spit and shaved into thin slices, shish kebab is cooked on individual skewers, creating a smoky, char-grilled flavor with tender, juicy meat.
What is İskender?
İskender (pronounced iss-ken-DARE) is one of Turkey's most famous regional dishes and a favorite among döner lovers. Named after its creator, İskender Efendi of Bursa, it features thinly sliced döner served over cubes of fresh bread, topped with rich tomato sauce, melted butter, and creamy yogurt.
The combination of crispy bread, tender döner, savory sauce, and cool yogurt creates one of the most iconic comfort foods in Turkish cuisine and is considered a must-try for anyone exploring authentic Turkish flavors.
